After Christmas there was the January rush, where all the work we’d put off at the end of December came back and bit us in the ass – well, not really, but orthodontie and teeth you know…
Anyhow, it has been a very busy few weeks. Winter came for a minute and there was a bit of frost on the ground. I scraped the windshield once. Then the warm weather came back and it has rained on and off for two weeks now. The ground is sodden, but I love to hike in the woods, so I put on my wellies and my rain gear and off I go – Julia, Auguste and Kalin as well!
Today was a horse show, and Julia was up at 5 am to get her horse ready. We got up at 7 and drove to the show to see her. She came in 4th, even with a refusal, and Kalin managed to toss her off during the warm-up, which means Julia will have to bake a cake for everyone (tradition when a kid falls off the horse at the club – they have to bring a cake or cookies for everyone!) Kalin is obviously feeling his oats, and being very spunky, which is nice for a horse his age (17!). Julia’s pride was bruised (and her butt too, I think).
I made a batch of lemon sugar cookies, which were a huge success, so I’ll have to go shopping later and buy more lemons. Here is the recipe:
1 large lemon, 1 stick butter, 2 eggs, 2 cups flour, 1 1/2 cup sugar, 1/4 cup powdered sugar, 2 teaspoons cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon baking soda, pinch of salt.
Juice the lemon and grate the peel. In a small bowl put 3/4 of the juice and 3/4 of the grated peel (set aside some juice and peel for later). In large bowl melt the butter, add the sugar and beat till creamy, add eggs and mix well. Add the lemon juice and peel, the sugar and the spices. Mix well. Add the flour gradually.
Put the dough on a cookie sheet and bake until lightly golden. With a spatula, put the still hot cookies on a plate. Now add the 1/4 cup powdered sugar to the rest of the lemon juice, mix well and use it to glaze the cookies. Sprinkle with the leftover grated peel. Let cool and enjoy!
